Cider Baked Red Mullet

Ingredients
  Red mullet fillets 12
  Apple cider 1 1⁄4 Cup (20 tbs)
  Mixed pickling spice 1 Tablespoon
  Bay leaves 4
  Onions 2 Small, cut in rings
  Salt To Taste
  Pepper To Taste
Directions

1 Preheat the oven to 350°F. Wash and dry the fish and season well with salt and pepper. Roll up the fillets, skin inward, beginning at the tail end. Place fairly close together in an ovenproof dish.
2 Cover the fish with the apple cider and sprinkle with the pickling spice. Place the bay leaves and the onion rings on top.
3 Cover the dish with aluminum foil and cook in the preheated oven for about 1 hour
