Apple Cider Chicken

Ingredients
  Broiler fryer 3 Pound
  Flour 6 Tablespoon
  Salad oil 1⁄4 Cup (4 tbs)
  Onion 1 Small
  Garlic 1⁄2 Clove (2.5 gm)
  Instant chicken broth 1 Cup (16 tbs)
  Salt 1⁄2 Teaspoon
  Pepper 1⁄8 Teaspoon
  Apple cider 1⁄2 Cup (8 tbs)
  Water 1⁄2 Cup (8 tbs)
  Catsup 2 Tablespoon
  Lemon rind 1 Teaspoon
Directions

Wash chicken pieces; pat dry.
Shake, a few at a time, in 4 tablespoons of the flour in a paper bag to coat well.
(Save remaining flour for sauce in Step 3).
Brown chicken slowly in salad oil in a large frying pan; remove from pan and set aside for future.
Stir onion and garlic into drippings in pan; saute just until soft.
Blend in saved 2 tablespoons flour, chicken broth, salt, and pepper; cook, stirring all the time, just until mixture bubbles.
Stir in cider, water, catsup, and lemon rind; continue cooking and stirring until sauce thickens and boils 1 minute.
Return chicken to pan; cover.
Simmer 45 minutes or until tender.
