Basic Court Bouillon

Ingredients
  Red wine/2 cups white wine and 2 cups water 4 Cup (64 tbs)
  Salt To Taste
  Celery stalks 1
  Onion 1 , stuck with 2 cloves
  Cloves 2
  Carrot 1 , sliced
  Thyme 1⁄4 Teaspoon
  Tarragon 1 Teaspoon
  Freshly ground black pepper 1⁄2 Teaspoon
  Chopped parsley 1 Tablespoon
  Bay leaf 1
Directions

MAKING
1. Boil all the ingredients for 10 minutes to combine thoroughly.

SERVING
2. Use immediately to poach fish or refrigerate until used.

TIPS
Use the bouillon within 3 days of refrigeration.
