Simple Court Bouillon
|Water||1 1⁄2 Quart|
|Onions||2 , thinly sliced|
|Carrots||2 , thinly sliced|
|Dry white wine||1 Cup (16 tbs)|
1) In a large saucepan, combine the water, onions, carrots and bouquet garni.
2) Bring to a boil and then continue to boil for 10 to 15 minutes.
3) To this, add salt.
4) If desired, add wine and then continue to cook for another 15 minutes.
5) You can use Court Bouillon for poaching fish and other seafood, eggs, vegetables, delicate meats etc. Before using, strain the Court Bouillon through a sieve set into a bowl or a clean pan.
