Cider Salad Molds
|Unflavored gelatin||1 Tablespoon (1 Envelope)|
|Cold water||2 Tablespoon|
|Fresh lemon juice||2 Tablespoon|
|Hot sweet cider||1 3⁄4 Cup (28 tbs)|
|Sugar||1⁄4 Cup (4 tbs)|
|Diced apples||1 1⁄2 Cup (24 tbs)|
|Diced celery||1⁄2 Cup (8 tbs), diced|
|Mayonnaise||4 Tablespoon (Adjust Quantity As Needed)|
|Chopped nuts||1 Tablespoon|
Sprinkle gelatin on combined cold water and lemon juice to soften.
Add hot cider and sugar and stir until dissolved; chill.
When mixture begins to set, fold in apple and celery.
Turn into 6 individual molds and chill until firm.
Unmold; serve on lettuce and top with mayonnaise and chopped nuts.
Makes 6 servings.
