Cider Spicy Pot Roast

Ingredients
  Boneless bottom round roast/Boneless top round roast / eye 3 Pound, trimmed of fat
  Cider vinegar 1⁄4 Cup (4 tbs)
  Unsweetened apple cider 1 Cup (16 tbs)
  Mixed pickling spices 2 Tablespoon
  Salt 2 Teaspoon
  Pepper 1⁄8 Teaspoon
Directions

GETTING READY
1) Preheat moderate oven at 350°.

MAKING
2) In a bowl take meat.
3) Add all ingredients and pour over the meat.
4) Cover and put in refrigerator for 24 hours.
5) In a heavy pot or Dutch oven put the meat.
6) Cover and simmer over low heat for about 2 1/2 hours or alternately roast it for 2 1/2 hours.
7) Transfer meat into serving platter.
8) With a bulb-type baster skim fat from pan drippings.
9) Simmer liquid uncovered till reduced.
10) Pour liquid on the meat.
11) Strain the reduced liquid over meat and serve.

SERVING
12) Serve hot.
