Brandy Snap Ring

Ingredients
  All purpose flour 1 1⁄4 Cup (20 tbs)
  Baking powder 1 Tablespoon
  Cornstarch 3⁄4 Cup (12 tbs)
  Confectioners sugar 2 Cup (32 tbs)
  Egg yolk 1
  Brandy snaps 8 , crushed
  Whipping cream 2⁄3 Cup (10.67 tbs)
  Candied red cherries 8
Directions

MAKING
1. Cream three quarters cup butter with sugar until light and fluffy
2. Beat eggs, rum, salt and lemon juice and rind to it; add baking powder, flour and cornstarch to it and blend them all well
3. Pour this mixture into a greased 9" ring and bake for almost an hour at 350° F
4. Cool in side the mould for a while and then in the cake rack; cut four layers
5. Cream the rest of the butter with confectioner's sugar and egg yolk
6. Spread between the four layers and on top to complete the cake; press crushed brandy snaps

SERVING
7. Decorate with cream and halves candied cherries
