Basic Court Bouillon

Ingredients
  Carrots 1⁄2 Cup (8 tbs), chopped
  Onions 1⁄2 Cup (8 tbs), chopped
  Celery 1⁄2 Cup (8 tbs), chopped
  Garlic 1⁄2 Clove (2.5 gm), crushed
  Butter 2 Tablespoon
  Peppercorns 4
  Cloves 2
  Bay leaf 1
  Salt 2 Teaspoon
  Vinegar 1⁄4 Cup (4 tbs)
  Ginger 1⁄4 Teaspoon
  Water 2 Quart
Directions

1. Saute first 4 ingredients in butter in large pot for 4 minutes. Do not brown.
2. Add remaining ingredients. Cook 5 minutes. Strain.
