  Frozen apple juice concentrate 3 Tablespoon, thawed
  Whole grain mustard 1 Tablespoon
  Lemon juice 1 Tablespoon
  Dry sherry/Nonalcoholic white wine 1 Tablespoon
  Minced shallots 1 Tablespoon
  Walnut oil/Canola oil 1 Tablespoon
  Dijon mustard 2 Teaspoon
  Ground black pepper To Taste
Directions

In a medium bowl, whisk together the apple juice concentrate, whole-grain mustard, lemon juice, sherry or wine, shallots, oil, and Dijon mustard.
Season with the pepper.
