Cider Roasted Squash
|Non-stick cooking spray||1 Tablespoon|
|Peeled seeded winter squash||8 Cup (128 tbs), cut into 1 inch cubes (Such As Butternut Or Acorn)|
|Onion||1 Medium, cut into wedges|
|Apple juice/Apple cider||1⁄4 Cup (4 tbs)|
|Olive oil/Cooking oil||2 Tablespoon|
|Brown sugar||1 Tablespoon|
|Ground nutmeg/Ground ginger||1⁄4 Teaspoon|
|Black pepper||1⁄4 Teaspoon|
Coat a 3-quart rectangular baking dish with | cooking spray.
Add the squash and onion; toss to combine.
In a small bowl combine apple juice, oil, brown sugar, salt, nutmeg, and pepper; pour over vegetables.
Roast vegetables in a 450° oven about 35 minutes or until vegetables are tender, stirring twice.
