Apple Rounds With Cider Sabayon Sauce
|Sugar||1⁄2 Cup (8 tbs)|
|Brandy||1⁄4 Cup (4 tbs)|
|Apple cider||3⁄4 Cup (12 tbs)|
|Ripe apples||4 (Such As Golden Delicious)|
|Freshly squeezed lemon juice||2 Tablespoon|
|Sugar||1 Cup (16 tbs)|
|Ground cinnamon||1⁄2 Teaspoon|
|Melted butter/Margarine||1 Tablespoon (For Brushing Grill)|
To prepare sabayon sauce, bring water to a boil in bottom half of a double boiler over medium heat.
Whisk together egg yolks, sugar, brandy, and cider in top half of double boiler.
Reduce heat to simmer and set top half of boiler over the simmering water.
Whisk sauce until it is foamy and has doubled in volume.
Peel and core apples and cut them into 1/2-inch rounds.
Place apple slices in a bowl.
Sprinkle with lemon juice.
Mix sugar and cinnamon together and spread on a plate.
Roll apple slices in sugar/cinnamon mixture.
Preheat stovetop grill.
Brush grill surface with butter.
Cook apple slices over medium heat for 1 minute on each side.
Place apple slices on separate dessert dishes.
Spoon Cider Sabayon Sauce over apples.
