Cherry Cider Salad's picture
  Apple cider/Apple juice 2 Cup (32 tbs)
  Cherry flavored gelatin 6 Ounce (1 Package)
  Canned pitted dark sweet cherries 16 Ounce (1 Can)
  Thinly sliced celery 1⁄2 Cup (8 tbs)
  Chopped walnuts 1⁄2 Cup (8 tbs)
  Cream cheese 3 Ounce, softened (1 Package)
  Canned applesauce 8 1⁄2 Ounce (1 Can)
  Leaf lettuce 1

Bring apple cider or juice to boiling.
Dissolve gelatin in boiling cider.
Drain cherries, reserving syrup.
Halve cherries and set aside.
Add enough water,to reserved syrup to measure 1 1/2 cups liquid; stir into gelatin.
Set aside 2 cups of the gelatin mixture; keep at room temperature.
Chill remaining gelatin till partially set.
Fold cherries, celery, and walnuts into partially set gelatin.
Pour into 6 1/2 cup ring mold.
Chill till almost firm.
Gradually add reserved gelatin to softened cream cheese, beating till smooth.
Stir in applesauce.
Spoon cream cheese mixture over cherry layer in mold.
Chill till firm.
Unmold on lettuce-lined platter.
