|Shallots/Scallions||2 , finely chopped|
|Ground lean chuck||1 Pound|
|Boiled ham||1⁄4 Pound, ground|
|Ice water||4 Tablespoon|
|Egg||1 , beaten|
|Ground pepper||To Taste|
|Beef consomm||1⁄4 Cup (4 tbs)|
|Brandy||1⁄4 Cup (4 tbs) (Hiram Walker Brand, Apricot Flavored)|
Saute the shallots, add the next 7 ingredients.
Wet hands and shape into patties.
Refrigerate for 1 hour.
Dust patties with flour; saute in oil and keep in warm oven.
Add consomme, Apricot Brandy, and cook five minutes.
Add butter and pour over patties.
Sprinkle with parsley
