Hiram Walker S Supreme Brandy Burgers

Ingredients
  Shallots/Scallions 2 , finely chopped
  Butter 4 Tablespoon
  Ground lean chuck 1 Pound
  Boiled ham 1⁄4 Pound, ground
  Ice water 4 Tablespoon
  Egg 1 , beaten
  Thyme 1 Pinch
  Ground pepper To Taste
  Flour 2 Tablespoon
  Oil 1 Tablespoon
  Beef consomm 1⁄4 Cup (4 tbs)
  Brandy 1⁄4 Cup (4 tbs) (Hiram Walker Brand, Apricot Flavored)
  Butter 2 Tablespoon
  Parsley 1
Directions

Saute the shallots, add the next 7 ingredients.
Wet hands and shape into patties.
Refrigerate for 1 hour.
Dust patties with flour; saute in oil and keep in warm oven.
Add consomme, Apricot Brandy, and cook five minutes.
Add butter and pour over patties.
Sprinkle with parsley
