Citrus And Tequila Chicken

Slow grilling over charcoal is a big secret in the taste of these chicken thighs. Make sure that you use thighs, they have more flavour and stay much more moist than other parts of the bird.
Ingredients
  Orange 1 , juiced
  Lime 1 , juiced
  Chipotle pepper in adobo sauce 1 , chopped
  Garlic 2 Clove (10 gm), crushed
  Orange juice 1 Cup (16 tbs)
  Lime juice 1 Tablespoon
  Chipotle pepper 1 , chopped (In Adobo Sauce)
  Garlic cloves 2 , crushed
  Dried oregano 1 Teaspoon
  Tequila 1⁄4 Cup (4 tbs)
  Olive oil 2 Tablespoon
  Salt To Taste
  Pepper To Taste
Directions

Combine first 7 ingredients, and pour over chicken thighs. Place in airtight container or ziplock bag and place in fridge to marinate for 6-8 hours.

On a grill over direct low heat, cook the thighs low and slow turning periodically to ensure even cooking.

Reduce marinade in a pot by …”€™s, and baste chicken in the last 10- 15 minutes of cooking time.

Add hardwood smoking chips to bring an extra layer of flavour.
