Spicy Mulled Cider

  Apple cider 1 Quart
  Ginger slice 6 , each about the size of a quarter
  Orange zest strip 3 (Colored Part Of The Rind)
  Whole cloves 8
  Cinnamon sticks 2 , cracked
  Honey 2 Tablespoon
  Lemon juice 2 Tablespoon

1 ln a large saucepan over moderate heat, stir together the cider, ginger if desired, orange zest, cloves, cinnamon sticks, and honey.
Bring the mixture just to a simmer, reduce the heat to low, and cook, partially covered, for 25 minutes.
Stir in the lemon juice and strain through a sieve intoanother heatproof container or individual mugs.
