African Cookie

 

African cookie is the broad classification of a number of different varieties of cookies made in the African Continent. These may be eaten as snacks but are more often served as a kind of dessert.

Krakelinge (South African Cookies)

 

Ingredients

 

  • butter
  • sugar
  • egg (beaten), yolk seperate
  • flour
  • baking powder
  • almonds (chopped)

 

Method

 

Butter and sugar are creamed in a bowl, egg is beaten into the mixture. Sifted flour and baking powder mixture is added and stirred into the butter mixture to form dough consistency. This is portioned out, shaped and placed on greased baking tray, brushed with egg yolk, sprinkled with sugar and almonds before baking in pre-heated oven till golden and crisp.

Soetkoekies - Sweet Wine and Spice based South African Cookies

 

Ingredients

 

  • Softened butter
  • All-purpose flour
  • Cooking spray
  • Baking soda
  • Ground cinnamon
  • Ground ginger
  • Ground cloves
  • Salt
  • Dark brown sugar
  • Egg, lightly beaten
  • Port wine (or Madeira or a sweet sherry)
  • Blanched almond, finely chopped
  • Whole blanched almonds, split lengthwise into halves
  • Egg white, combined with 2 teaspoons of water and beaten to a froth

 

Method

 

Flour, baking soda, salt, cinnamon, cloves and ginger, are sifted together and set aside. Butter and sugar are creamed in a large bowl; egg is beaten into the mixture. Sifted flour mixture is gradually added and stirred into the butter mixture. Wine and chopped almonds are mixed in and a compact dough is formed. A cookie-cutter aids in giving desired shapes to cookies. A blanched almond is pressed gently in the centre of each Soetkoekie before brushing with beaten egg-white-water liquid. These are finally baked, in a (cooking spray) greased tray; within a pre-heated oven till crisp and done.

These unique cookies are made in a similar manner as above but include chopped bittersweet chocolate, brown sugar and fresh coarsely ground black pepper. These are more calorie-dense owing to the higher fat and sugar content associated with the chocolate source.

 

African Ginger Cookies

 

These flavoursome cookies involve the use of some golden corn syrup, vinegar; spices like ground ginger, cinnamon and cloves; brown sugar among other common ingredients.
