African Chicken

African Chicken is a dish as exotic as its name. Full of flavor, African chicken consists of chicken baked in a sauce made with onion, garlic, peanut butter, coriander, and red pepper flakes. To intensify the flavor, salt, black pepper, and a little more red pepper flakes may also be added to the sauce. African Chicken may be served with basmati rice, roasted potatoes, baked sweet potatoes, or steamed vegetables like carrots, broccoli, snow peas, or spinach.
