African Banana Cake
African Banana Cake is a native African cake which is a well-accepted dessert. It makes use of mashed bananas, milk, sponge cake crumbs, eggs, sugar, salt, lemon juice and vanilla essence. Milk is used to soak the sponge cake crumbs; it is then homogenised with a blender and all the other ingredients are added and blended to obtain a smooth mixture. This cake mixture is poured into a greased baking dish and baked in pre-heated oven till done. It is allowed to stand for a while before serving.
While the Banana Cake is an instant source of energy and provides Vitamin C, potassium, phosphorus, calcium, and fibre along with protein, some value additions are possible.
Some crushed walnuts would make for a healthy crunchy addition that would help increase Vitamin E, potassium, magnesium and unsaturated fats. They offer some unique phytonutrients which are rare. They also contain invaluable anti-oxidant and anti-inflammatory compounds that protect from certain types of cancers.
