West African Yam Muffins are well loved in my family. As holidays approach everyone's longing for the West African Yam Muffins also increases. Try this wonderful West African Yam Muffins and you will understand why it is so addictive!
Ingredients
  All purpose flour 1 1⁄2 Cup (24 tbs)
  Baking powder 1 Tablespoon
  Salt 1⁄2 Teaspoon
  Ground ginger 1 Teaspoon
  Brown sugar 1⁄4 Cup (4 tbs)
  Eggs 2
  Yams 1⁄2 Cup (8 tbs), mashed (cooked and)
  Milk 2⁄3 Cup (10.67 tbs)
  Butter 3 Tablespoon, melted
  Molasses 1 Tablespoon
Directions

Blend together flour, baking powder, salt, ginger and brown sugar in a large bowl.
Whisk eggs, yam, milk, butter and molasses.
Make a well in the dry ingredients and add the liquid mixture, stirring lightly and quickly.
Spoon into greased muffin cups and bake until tester comes out clean.
Bake at 400 degrees 20 to 25 minutes
