Fish and Eggplant Stew

How would you call a stew with a combination of fish, meat, eggplant and tomatoes? Probably not fish stew or meat stew. I don’t know how to call this delicious stew in English but this stew happen to be one of the most delicious among Guinean stews. It is called “Magangni “in Guinea. And it is usually served with rice and cooked okra. The recipe is very simple to make yet so yummy.
Ingredients
  Red snapper 1 Medium
  Eggplant 1 Large, chopped finely
  Onion 1 Large, chopped finely
  Garlic 3 Clove (15 gm), minced
  Fresh tomatoes 3 Medium, mashed
  Tomato paste 1 Tablespoon
  Ground beef 3 Tablespoon (Optional)
  Dried shrimp 2 Tablespoon (Leveled) (smoked Bonga fish)
  Bouillon cube 1 Medium
  Vegetable oil 3 Tablespoon
  Black pepper 1 Teaspoon (to taste)
  Chilli 1 Teaspoon (to taste) (Optional)
  Salt 1 Teaspoon (to taste)
Directions

GETTING READY
1. Clean the fish.
2. Chop the onions, eggplant finely.
3. Mince the garlic cloves and mash the tomatoes.
4. In a pan cook the fish with little water and salt. Set aside, the fish and the stock/ bouillon.
5. After the fish cools, separate the flesh by remove the bones and skin.

MAKING
6. In a bowl, take the mashes tomatoes; add tomato paste, fish, eggplants, ground beef, onion and garlic. Mix them.
7. In a deep frying pan, heat oil and add the tomato, fish mixture and stir fry for 3 minutes.
8. Pour the fish stock/ bouillon to this stir fried mixture.
9. Season it with black pepper, bouillon cube and dried shrimp. Add chilli or any hot pepper if desired.
10. Allow it to simmer for 30 minutes stirring occasionally. Turn off the heat.

SERVING
11. In a serving plate, serve it hot with rice.

TIPS
This dish can be garnished with South African spice called Solumbra.
