Egg Stew

Egg stew is not only quick and easy to make but it is also so yummy. It can be served with boiled yams, potatoes, sweet potatoes or cassava. The recipe cost is also extremely cheap. It can be served for breakfast or dinner. I personally love this stew and I promise you are going to love it too.
Ingredients
  Egg 1 Medium
  Tomatoes 2 Medium, diced
  Onion 1 Medium, sliced
  Garlic 2 Clove (10 gm), chopped finely
  Vegetable oil 1 Tablespoon
  Salt 1 Pinch (to taste)
  Black pepper 1 Pinch (to taste)
  Water 2 Drop
Directions

GETTING READY
1. Slice the onion.
2. Dice the tomato.
3. Chop the garlic cloves finely.

MAKING
4. Heat oil in a pan. Add onion and garlic. Stir and cook till onion is soft and translucent.
5. Put in the bouillon cube, black pepper and stir it.
6. Add the tomatoes and few drops of water and cook for 10 minutes or till soft.
7. Beat the egg slightly and pour into the onion- tomato mix. Reduce the heat and cook for 1 minute. Keep stirring till done.

SERVING
8. Take a serving plate, transfer the egg on it and serve warm with boiled potatoes.
