Kosambri is a South Indian carrot salad made with soaked lentils, coconut, lemon and fried spices. This is a classic home recipe from Bangalore. Rarely, have I come across it in restaurants so you are going to have to make it if you want to try it! It is really colorful and refreshing and I love to take it to picnics.
  Carrot 1 Medium, grated
  Cucumber 1 Medium, grated
  Tomato 1 Medium, diced
  Coconut 2 Tablespoon, grated
  Lentils 2 Tablespoon, soaked (moong dal)
  Cooking oil 1⁄2 Tablespoon (For frying spices)
  Mustard seeds 1 Teaspoon (For frying spices)
  Chili pepper 1 Medium, dried (For frying spices)
  Asafoetida 1 Pinch (For frying spices)
  Curry leaves 4 Medium (only leaf, For frying spices)
  Lemon juice 2 Tablespoon (For frying spices)
  Cilantro 2 Tablespoon, chopped (For frying spices)

1) Take a bowl, and add carrot, cucumber, tomato, coconut, lentils and mix it.
2) To fry spices, heat oil in small wok and add mustard seeds. Let it splatter.
3) Add asafeotida and dry red chili and curry leaves.
4) Pour this into the salad and mix it well.
5) Season it with lemon juice, cilantro and salt.
6) Mix it well.

7) Kosambri can be served as a side dish.
