Berbere is used in Ethiopia to flavor stews (wat). The seasoning is popular in Ethiopia just like Curry in India. Making Berbere in Ethiopia can take up to three days. But I am going to use ground spices to make it fast and easy.
1⁄2 Cup (8 tbs)
Cardamom pods/1 tsp ground cardamom
1 1⁄2 Tablespoon
Cloves/0.25 tsp of ground cloves
In a bowl add all the ground spices.
On low heat a saucepan and toast the fenugreek seeds, cardamom pods, chilies, cloves and onion. Then, toast for 2 min. Remove and let it cool down for few minutes.
Break the cardamom pods and get the seeds, discard the stems from the chilies and grind all the toasted spices together.
Toast all the spices together in saucepan for 5 min.
The Ethiopians love their stews! So to make a good Ethiopian stew, you will need the Berbere spice mix. If you have an African store near where you live, the you can buy it, else watch and learn from Oumou from this video! Besides, you can make under 15 minutes of you have all the ingredients at hand.
