Ethiopian Berbere Spice Mix

Berbere is used in Ethiopia to flavor stews (wat). The seasoning is popular in Ethiopia just like Curry in India. Making Berbere in Ethiopia can take up to three days. But I am going to use ground spices to make it fast and easy.
Ingredients
  Fenugreek seeds 1 Teaspoon
  Dried chilies 6
  Paprika 1⁄2 Cup (8 tbs)
  Ground ginger 2 Teaspoon
  Onion powder 2 Teaspoon
  Ground allspice 1⁄2 Teaspoon
  Ground nutmeg 1 Teaspoon
  Cardamom pods/1 tsp ground cardamom 1 Tablespoon
  Garlic powder 1⁄2 Teaspoon
  Salt 1 1⁄2 Tablespoon
  Ground cinnamon 1⁄2 Teaspoon
  Cloves/0.25 tsp of ground cloves 10
  Ground cumin 1 Teaspoon
Directions

In a bowl add all the ground spices.

On low heat a saucepan and toast the fenugreek seeds, cardamom pods, chilies, cloves and onion. Then, toast for 2 min. Remove and let it cool down for few minutes.

Break the cardamom pods and get the seeds, discard the stems from the chilies and grind all the toasted spices together.

Toast all the spices together in saucepan for 5 min.

Put in a jar and store.
