African Chicken With Almond Tomato Sauce

Ingredients
  Chicken 1 , cut up (Broiler Fryer)
  Peanut oil 4 Tablespoon
  Onion 1 Cup (16 tbs), chopped
  Almonds 2⁄3 Cup (10.67 tbs) (Whole Not Blanched)
  Hot water 2 Cup (32 tbs), divided
  Tomato paste 6 Ounce (1 Can)
  Salt 1 Teaspoon
  Pepper 1⁄2 Teaspoon
  Okra 10 Ounce, frozen and cut (1 Package)
Directions

MAKING
1) In a large skillet, place oil and heat over high temperature.
2) Put chicken and cook till brown on all sides.
3) Remove and keep only 2 tablespoons oil in the skillet.
4) Reduce heat to low and add onion.
5) Cook, uncovered for about 5 minutes.
6) In blender, place almonds and 1/2 cup of the hot water; blend for 1 minute.
7) Add remaining 1 1/2 cups water and tomato paste.
8) Sprinkle chicken with salt and pepper.
9) Pour almond, tomato sauce over chicken in skillet.
10) Add okra, separating with fork.
11) Cover and simmer for about 15 minutes.

SERVING
12) Serve hot over rice.
