African Sweet Potato Salad

Ingredients
  Sweet potatoes 4 Medium
  Peanut oil/Vegetable oil 1⁄4 Cup (4 tbs)
  Lemon juice 2 Tablespoon
  Salt 1⁄2 Teaspoon
  Pepper 1⁄4 Teaspoon
  Green pepper 1 Medium, chopped
  Onion 1 Small, chopped
  Stalk celery 1 , chopped
  Parsley 2 Teaspoon
Directions

Heat enough salted water to cover potatoes ( 1/2 teaspoon salt to 1 cup water) to boiling.
Add potatoes.
Heat to boiling; reduce heat.
Cover and cook until tender, 30 to 35 minutes; drain.
Cool potatoes; slip off skins.
Cube potatoes; place in glass or plastic bowl.
Mix oil, lemon juice, salt and pepper; pour over potatoes.
Cover and refrigerate at least 4 hours.
Stir in green pepper, onion and celery.
Garnish with parsley.
